I’ve always had a good experience at Meiji Sushi.
All sushi will probably have vegan options, like avocado roles or vegetable udon. It might not be explicitly labelled vegan but it will still be vegan just because they happen to not use any animal products in the ingredients
This is something very much out of my wheelhouse. I wouldn’t know if rice, veggies or whatever are vegan. Do vegans typically rely on assumptions for this?

Yeah I guess so. A food being vegan just basically means theres no meat, dairy or eggs in it. So I don’t know if its an assumption necessarily to take it for granted that rice or whatever is vegan, you just kind of know that there’s no meat, dairy or eggs in there (unless its deep fried, which can complicate things, so you might need to ask the waiter/waitress).

It’s been a few years since I’ve been to the one great city, but Wakoya and Naru are both fantastic. They also both have vegan options.
Bonus: they are half a block apart so if one’s too busy, you just go to the other.
